Lemon Cake

Whipping cream is not usually something we have in our house. Thanksgiving was the other day and we had to make lefse so we bought some whipping cream. Yes, we had to. Thanksgiving is not the same without it.

If you haven’t been eating lefse for Thanksgiving, you don’t know what you’re missing out on. I’m not sure if it was fortunate or unfortunate but we had a bunch of whipping cream left over. Harmony asked Google for some good options for using up extra whipping cream. Google had several suggestions, from scones to soups.

Then the recipe for Lemon Lime Cake with Lemon whipped cream frosting popped up. That was the one we chose. The boys never turn down an opportunity to help cook.

If you want to try the recipe too, here it is:

  • 1 cup sugar,
  • ½ cup butter
  • 2 eggs
  • 1 ½ tsp. vanilla
  • 1 T. lime juice
  • 2 T. lemon juice
  • 1 ½ cups flour
  • 1 tsp. baking powder
  • ¼ cup milk.

Bake it in a 350 degree oven for half an hour. Ours actually cooked almost twice that long and was still not quite done all the way. But that’s the way it goes sometimes with RV ovens.

When you take your cake out of the oven I suggest you use an oven mitt. Your cake should be hot. Grabbing it with your bare hand will cause you to get burned. The lemon lime cake turned out delicious.

All the boys loved it and were asking for more. It turned out to be a fairly quick and easy dessert to make. It was nice and light and didn’t leave you with that full feeling that some other desserts do.

We just mixed a bunch of whipping cream, unmeasured….added some powdered sugar and lemon juice until it had the consistency of whipped cream. Now you’re ready to start baking your cake. Enjoy

In 2016 a family hit the road with 5 of their children. They were going to travel the country in a Ford Excursion that had a cummins engine. A ford with a cummins, hence the name, Fummins. Ford+Cummins=Fummins. It was going to be a fummins family roadtrip. Within 3 months they decided that the travel trailer they were pulling wasn't working well for their family. They needed more space so they upgraded to a fifth wheel. It's not easy to pull a fifth wheel with an excursion, so they had to bid farewell to the fummins.
